After doing some testing and comparisons for degoogling my Pixel 3a XL, this is what I found:

Calyx OS is fine for normies who want security but don't want to lose their paid Android apps or banking apps

Graphene OS is the best for overall security and if you only plan on using FOSS-friendly Android apps or don't need to use banking apps

Ubuntu Touch is a newer option (for some phones) if you want an alternative to both Android and iOS that is truly Linux-based

eOS (by the E Foundation) used to be an option but is inconsistent and tends NOT to be on the latest security updates thanks to lack of interest

Lineage OS is the most general purpose across hundreds of phones but needs serious work to be more secure (plus has THE WORST WEB BROWSER I have ever used)

Overall, Graphene OS is what I plan to use for a while.
